The Ancient Alchemy of Oxymels: Honey, Vinegar, and Herb

In the Wise Woman tradition, we often look for ways to make medicine that is as delicious as it is effective. One of my personal favorite preparations is the Oxymel. Derived from the Greek word oxymeli, which literally translates to "acid and honey," this preparation has been used for thousands of years to support respiratory health, digestion, and the immune system.

At Herbs Love + Yoga, I love teaching oxymels because they are incredibly accessible. They use simple kitchen staples to create a potent, shelf-stable remedy that even the pickiest eaters (including kids!) usually enjoy.

​What Exactly is an Oxymel?

An oxymel is a combination of raw apple cider vinegar and raw honey infused with herbs.
  • The Vinegar: Acts as a "mineral rockstar," pulling vitamins and minerals out of the plants. It is also cooling and helps break up congestion.
  • The Honey: Soothes the throat, acts as a natural preservative, and balances the sharp acidity of the vinegar with its sweetness.

While some people prefer to infuse their herbs in vinegar alone and add honey later to control the sweetness, I prefer to infuse the honey right along with the herbs. This allows the honey itself to take on the medicinal benefits and spirit of the plant allies.

How to Make Your Own Herbal Oxymel

(The Folk Method)This is a beautiful, intuitive process that requires no fancy equipment—just a clean jar and a little patience.
What You’ll Need:
  • A Clean Glass Jar: A pint or quart mason jar works perfectly.
  • Herbs of Choice: (Sage, Thyme, Rosemary, or Nettle are great starts).
  • Raw Apple Cider Vinegar (ACV): Preferably organic and "with the mother."
  • Raw Local Honey.
  • Parchment Paper: Essential if using a metal lid!

Instructions:
  1. Prepare Your Herbs: Fill your clean glass jar 1/3 of the way full if using dried herbs, or loosely fill the jar if using fresh herbs.
  2. Add the Vinegar: Fill the jar about 3/4 of the way with your apple cider vinegar.
  3. Add the Honey: Top off the remaining 1/4 of the jar with raw honey.
  4. Stir and Seal: Stir well to ensure the honey and vinegar are mixed and all air bubbles are gone. Place a piece of parchment paper over the mouth of the jar before screwing on the lid to prevent the vinegar from corroding the metal.
  5. The Infusion: Store the jar in a cool, dark place for 4 weeks. Give it a gentle shake every few days to keep the extraction moving.
  6. Strain: After a month, strain out the plant material and pour your finished oxymel into a clean bottle.

How to Use Your Oxymel

Oxymels are incredibly versatile in the kitchen and the medicine cabinet:
  • By the Spoonful: Take 1 teaspoon to 1 tablespoon as needed for respiratory support or a scratchy throat.
  • As a Tonic: Stir a tablespoon into sparkling water for a refreshing, health-boosting "shrub."
  • In the Kitchen: Use it as a base for a unique salad dressing or drizzle it over steamed greens to help your body absorb those plant-based minerals.
